Ok! So I've added everyone as authors, which just makes the blog you're own. I think it would be easy if you could BOLD the ingredients. And of course any tips, thoughts, suggestions regarding the recipe is always wonderful. Dinner recipes are certainly not a requirement but don't go all desserty on us.. 'cause that's just mean :) Add any suggestions to the "HEALTHY IDEAS" and put new ideas first and but ** by a new idea. I would love to add new fun gadgets to the blog, but I can't find anything great although I know it's possible. So feel free to add fun things :) I would LOVE a like/dislike gadget or a way to rate the recipes.

Lets try to keep this going! It could turn out pretty cool. I don't plan on sharing this blog with many people, we'll see how well we keep this going. (I'll delete this intro soon)

Mushroom Herb-Chicken

4 (6oz) boneless, skinless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon black pepper
Cooking Spray
3 large shallots, peeled ad sliced length wise
1 (6oz) package pre-sliced mushrooms
1/3 cup dry Sherry or Cooking Sherry (can also substitute red wine vinegar + sugar)
1 teaspoon dried marjoram or oregano, crushed



1. Place each chicken breast between two sheets of heavy-duty plastic wrap. Pound to 1/3 inch thick with mallet or heavy skillet. Coat both sides with salt and pepper, then spray with cooking spray. Cook in a large nonstick skillet over medium-high heat for 5-6 minutes on each side or until browned.

2. While chicken is cooking, cut shallots vertically into thin slices to measure 1 cup. Remove chicken from pan, coat pan with cooking spray, add mushrooms and shallots and coat veggies with cooking spray. Cook 1 minute, stirring constantly. Stir in Sherry (or substitute) and marjoram. Return chicken to pan and cook for 3 minutes or until chicken is cooked all the way through and mushrooms are tender.

Serve chicken with mushroom and shallot mixture over the top.

Makes 4 servings!
